Literally, sweet sake, amazake is a naturally fermented nonalcoholic sweet rice cream that can be porridge-like (thick) or diluted as a beverage. Served warm, it is both comforting and energizing. It can also used as a great substitute for sugar.

Amazake’s sweetness comes from a natural fermentation process by which koji breaks down starches into simple sugars. The process is similar to sake, but with no alcohol content. Rich, creamy, with a complex flavor, it also provides many health benefits. (Rich in vitamins, minerals, and beneficial enzymes.) 

It can be enjoyed as a natural sweetener (instead of sugar), vegan baking and post-work drink etc.
