Steamed Rice

Rice Koji

Master Brewing Protocol
The Sandan-Shikomi Method (Three-Stage Mash) represents the pinnacle of traditional sake fermentation. Adding ingredients in stages prevents contamination and encourages healthy yeast growth, resulting in a superior final product with remarkable complexity and balance.

Hatsuzoe
The Initial Mash
Constituents:
150g Steamed Rice / 100g Koji / 400ml Water / Complete Yeast Culture & Lactic Acid
Thermal Protocol: Maintain 20–25°C for 24 hours to ensure robust yeast propagation and enzymatic initiation.

Odori
The Propagation Phase
Constituents:
No additional ingredients. Thermal attenuation to 12°C to stabilize the mash environment.

Nakazoe
The Middle Addition
Constituents:
350g Steamed Rice / 100g Koji / 600ml Water
Thermal Protocol: Execute 48 hours post-Hatsuzoe. Gradually reduce temperature to 10–9°C to optimize enzymatic conversion.

Tomezoe
The Final Build
Constituents:
600g Steamed Rice / 200g Koji / 1,000ml Water
Thermal Protocol: Implement 24 hours post-Nakazoe. Attenuate temperature to 8–6°C to establish optimal fermentation kinetics.
Kinetic Fermentation Control
Approximately 30 Days
Days 1–10
Primary Fermentation Initiation
Fermentation commences. Execute a controlled thermal ramp from 6°C to 10°C to stimulate yeast activity. Observe gas evolution and aromatic development (typically evident by Day 3).
Days 11–15
Peak Fermentation Activity
Maintain stable temperature at 10°C. Monitor vigorous surface activity and bubble formation, indicating robust enzymatic conversion.
Days 16–30+
Secondary Maturation Phase
Revert to 6°C as primary fermentation subsides, allowing the aromatic profile and flavor complexity to deepen and mature.

Free-Run Extraction
The initial gravity-driven extraction. Characterized by fresh, delicate aromatics and a lighter flavor profile.

Nakadori
Heart Press
The middle fraction, representing the optimal balance of complexity and refinement. The most prized expression of quality sake.

Seme
Final Press
The final, high-pressure extraction. Yields a more robust, intensely flavored sake with pronounced character.
Master Brewer's Protocol
Sterilization & Sanitation
Meticulously sanitize all equipment and vessels using boiling water or food-grade alcohol. This prevents microbial contamination and ensures fermentation integrity.
Natto Exclusion Protocol
Strictly avoid consuming or storing Natto during the brewing cycle. Natto spores are highly antagonistic to sake fermentation and will compromise the entire batch.
Temporal Discipline
The fermentation timeline demands patience and precision. Do not accelerate temperature transitions or ingredient additions. Superior sake requires adherence to the full maturation cycle.
